Chettinad recipe is the one of the best south indian style food.Mor Kuzhambu can be made with many vegetables like Bindi(Lady’s finger, White pumpkin, drumstick).best suited will be Vendakkai or Okra and white pumpkin(poosanikkai). Authentic and Traditional South Indian recipe which is most famous in agraharam as well. It tastes yummy when eaten with pappad or pickle.
Ingredients
Ladies finger-8
Onion-little
Curd-2 cups
Set – I (To grind)
Coriander seeds-1 table spoon
Cumin seeds-1 teaspoon
Channa dhal (kadalai paruppu)-1 table spoon
Red chillies – 2
Green chillies – 2
Ginger-a very small piece
Grated coconut-2 table spoons
Set – II- (To Seasoning)
Coconut oil- 1 teaspoon
Red chillies -2
Mustard seed-1 teaspoon
Curry leaf-little
Method
Soak the items given in (Set-I). After 20 minutes grind the soaked (Set-I) until it will become a smooth paste.
Beat the curd in a mixer (grinder) with little salt and turmeric powder.
Add one more cup of water into a curd and keep it aside.
Cut the ladies finger or white pumpkin (poosanikkai) into small pieces.
In a pan or kadai in little oil saute and then cut the onion length wise.
Add ladies finger or white pumpkin (poosanikkai) pieces and onion and fry nicely for 5 minutes.
Add half cup of water and cook it until the pieces cook well. Once the pieces are cooked add the ground masala mixed in half cup of water with the salt needed.
Let the mixture comes to boil. Now add the curd and switch off within a minutes. Otherwise the curd curdles will form and spoil the recipe.
Now in a separate kadai or pan seasons the curry in coconut oil with the items given in To season and pour on top of the curry(don’t mix the seasoning immediately)
